What separates a workstation
A workstation is built for a load that runs for hours rather than minutes: ECC memory, certified drivers, a power supply sized for the whole envelope and a cooling design that holds a clock rather than visiting it. For a fine-tuning run or a long batch job, that is the difference between a result and a thermal shutdown.
Memory is the reason to buy one
The RTX PRO cards are the only way to put 48GB, 96GB or more of fast memory behind one GPU. That is what lets a 70B model sit entirely in VRAM instead of being split across a card and system memory, and the gap between those two situations is far larger than any clock speed difference.
Usable AI memory decides what a machine can load at all, and memory bandwidth decides how fast it answers once loaded. Those two numbers matter more than the processor name on the box. A machine with a large unified pool and modest bandwidth will run a very large model slowly; a machine with a fast narrow pool will run a small model quickly and refuse a large one outright.
