When a workstation is the right answer
Buy a workstation when the machine will run a long job unattended, when you need ECC memory, or when you need more fast memory behind one GPU than a consumer card can provide. Short of that, a well-built desktop does the same work for less.
The memory argument
An RTX PRO card with 48GB or 96GB lets a large model sit entirely in VRAM. Splitting that same model across a 32GB consumer card and system memory is not a small penalty; it changes the experience completely.
Usable AI memory decides what a machine can load at all, and memory bandwidth decides how fast it answers once loaded. Those two numbers matter more than the processor name on the box. A machine with a large unified pool and modest bandwidth will run a very large model slowly; a machine with a fast narrow pool will run a small model quickly and refuse a large one outright.
Total cost
These machines are expensive, and the price gap against a consumer tower buys reliability, support and memory capacity rather than raw speed. If none of those three is your constraint, the money is better spent elsewhere.
